Instructions

  1. Add the coconut oil to a large pot along with the chopped onion, sauté until soft and translucent.
  2. Next, add the minced garlic and mix with the onions dried oregano and dried basil until fragrant.
  3. Slice your mushrooms and add to the pot with the Soy Sauce and cover for 10-15 minutes in order to allow the mushrooms to release their water.
  4. Uncover the pot and cook for another 10-12 minutes.
  5. Finally, add the coconut milk and cook for a further 10 minutes and season with salt and pepper to taste.
  6. Garnish with some freshly chopped shallots or parsley if desired and serve with toasted baguette.
