Method
- Heat the olive oil in a pan over medium heat. Add the onion and cook until soft, about 4 minutes, then add the garlic and cook 1 minute more.
- Stir in the black beans, cumin, smoked paprika and chili powder along with a splash of water. Simmer for 5 minutes, lightly mashing about a third of the beans.
- Warm the corn tortillas in a dry pan or over a flame.
- Fill each tortilla with the beans and top with avocado, cilantro, salsa and a squeeze of lime.
