Black Bean Tacos

Ingredients
  

  • 2 cans black beans drained and rinsed
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 8 corn tortillas
  • 1 avocado sliced, to serve
  • fresh cilantro, lime and salsa to serve

Method
 

  1. Heat the olive oil in a pan over medium heat. Add the onion and cook until soft, about 4 minutes, then add the garlic and cook 1 minute more.
  2. Stir in the black beans, cumin, smoked paprika and chili powder along with a splash of water. Simmer for 5 minutes, lightly mashing about a third of the beans.
  3. Warm the corn tortillas in a dry pan or over a flame.
  4. Fill each tortilla with the beans and top with avocado, cilantro, salsa and a squeeze of lime.
