Tofu Scramble

Ingredients
  

  • 1 block firm tofu drained and crumbled
  • 1 tbsp olive oil
  • 1/2 onion diced
  • 1/2 red bell pepper diced
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 2 tbsp nutritional yeast
  • 2 cups fresh spinach
  • salt and pepper to taste

Method
 

  1. Heat the olive oil in a pan over medium heat. Add the onion and bell pepper and saute until soft, about 4 minutes.
  2. Add the crumbled tofu, turmeric and cumin, stirring to coat, and cook for 4-5 minutes until heated through.
  3. Stir in the nutritional yeast and spinach and cook until the spinach wilts, about 1 minute.
  4. Season with salt and pepper and serve warm with toast.
