Garlic Roasted Asparagus

Tender-crisp roasted asparagus with garlic, lemon and toasted pine nuts — an easy, elegant side dish.

Ingredients
  

  • 1 bunch asparagus woody ends trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • freshly ground black pepper to taste
  • 1 tsp lemon zest
  • 1 tbsp pine nuts toasted, optional

Method
 

  1. Preheat the oven to 220C (425F) and line a baking sheet with parchment.
  2. Toss the asparagus with the olive oil, garlic, salt and pepper and spread in a single layer.
  3. Roast for 12-15 minutes, until tender-crisp and lightly browned.
  4. Transfer to a plate and finish with lemon zest and toasted pine nuts.
