  • 1 cup + 6 tbsp Whole Wheat Flour
  • 3/4 tsp cornstarch
  • 1/4 tsp baking powder
  • 1/2 tsp Ground Ginger
  • 1/4 tsp ground Cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 Salt
  • 2 tbsp melted coconut oil
  • 1 Egg
  • 1/2 tsp Vanilla Extract
  • 1/4 cup molasses
  • 2 tbsp Maple Syrup


  • 10 tsp confectioner's sugar
  • 2 tsp dairy free mill
  • 10 tsp confectioner's sugar
  • 2 tsp dairy free milk


  • In a mixing bowl, whisk together the flour, cornstarch, baking powder, ginger, cinnamon, nutmeg, cloves and salt.
  • In a separate bowl, whisk together the coconut oil, egg, and vanilla extract. Stir in the molasses, and maple syrup.
  • Gradually begin to add the dry ingredients to the wet ingredients, stirring until all ingredients are well incorporated
  • Transfer the dough onto a large sheet of plastic wrap and shape into a tall rectangle. Cover the top with another plastic wrap and refrigerate the dough for at least an hr.
  • Keep the dough within the plastic wrap and start to roll it out in order to begin cutting out the cookies.
  • Press the cookie cutter into the dough and make sure that each shape lies as close as possible to its neighbor.
  • Peel the unused dough and re-roll to make more cookies.
  • Preheat your oven at 160 degrees Celsius, place the cut out cookies onto a baking sheet, and bake for 8 to 10 minutes.
  • Allow cookies to cool for 5-10 minutes before removing from your baking sheet.


  • To make the icing stir together the confectioner’s sugar and milk in a small bowl.
  • Spoon the icing into a zip-topped bag and snip off the corner in order to pipe the icing onto the cooled cookies.
